Chocolate Chip Cookies

I did some pre Christmas baking on Sunday, and first on my list was chocolate chip cookies. These cookies store well in the freezer, making them perfect to make ahead, once they are dethawed they are just as soft as the day you made them, I add chopped pecans for a little extra crunch and I think it is a nice compliment to the oatmeal and chocolate.

What you need:

  • 2 1/2 cups flour

  • 1/2 cup instant oats

  • 1 tsp baking powder

  • 1/2 tsp baking soda

  • 1/2 cup Crisco

  • 1/2 cup unsalted butter room temperature

  • 3 tbs honey (optional)

  • 2 tsp vanilla extract

  • 1 1/3 cup granulated sugar

  • 2 large eggs room temperature (not pictured, oops!)

  • 1 cup semi sweet chocolate chips

  • 1 cup milk chocolate chips

  • 1 cup chopped pecans/walnuts (optional)

Bake at 350 degrees for 17 minutes

I lined my baking sheets with parchment paper for easy clean up, and used a melon ball to scoop dough
